INGREDIENTS:
Kale salad
2 bunches of kale
1 lemon
1/4 cup sliced almonds
1 avocado diced
1/2 cup diced cherry tomatos
Tahini dressing
3 tablespoons tahini
1/4 cup water
2 teaspoons olive oil
juice from one lemon
1 teaspoon garlic
1/2 teaspoon salt
INSTRUCTIONS:
Clean kale, and remove the leaves from the stems.
Squeeze the juice from one lemon over the leaves, and massage the kale with your hands to help soften the leaves a bit.
Mix up the dressing, and pour over the kale (use as much dressing as you like).
Add sliced avocado, tomato, and almonds and toss.
You can easily add a protein to this salad if you want. Sauted tofu, or tempeh, or even some cooked quinoa will add some protein, and make this salad a very filling meal.
