Vegan Gluten Free Mexican Wedding Cookies

I have heard these cookies called a lot of things. Mexican wedding cookies, Russian tea cookies, snow balls, Danish wedding cookies. I don’t care what they are called, they are delicious, buttery little bites, packed with nuts and rolled in powdered sugar. They are addictive! We made our recipe gluten free so more people can enjoy them, but you can easily swap out the gluten free flour in the recipe for all purpose, easy peasy.

4. The perfect Vegan Peanut Butter Cookie

The perfect vegan peanut butter cookie

I know most people have a go to vegan peanut butter cookie recipe, but what makes this one a little special is a secret kick of nutty flavor, thanks to some almond extract. I love peanut butter cookies always and forever. They are soft and chewy, and perfect with a glass of plant based milk or a hot cup of coffee. I will never turn down a vegan peanut butter cookie! These cookies are so super simple to make. I can easily bake up a batch any time I have a craving or need a cookie in a hurry for party or a quick treat for my kids. 5. Vegan Soft Frosted Sugar Cookies

Soft frosted vegan sugar cookies

You know those big soft sugar cookies covered in soft frosting and sprinkles at the grocery store bakery? The ones your kids are always begging for because they are also normally a bright happy color? Well, since they are not vegan, we decide to just make our own vegan version at home, and they are a hit! The first time we made them was for the 4th of July and opted to keep our frosting white and just add sprinkles. You can make the frosting any color you want, and make these cookies for any holiday or any occasion by adding some festive sprinkles. So fun, and so delicious!

6. Dairy Free Oreo Truffles

Dairy free Oreo Truffles

Surpisingly enough, Oreos are diary free. Some people prefer to stay away from them because the sugar use may not be vegan in some countries, but there are other chocolate sandwich cookies that are vegan if you avoid Oreos for that reason, Either way, if you are not in a baking mood but need to make a treat in a hurry, these Oreo truffles are just the thing. Just crush up some Oreos, mix with some vegan cream cheese, dip in some melted chocolate and you are good to go. Let me tell you how addictively delicious these treats are! During the holidays we like to sprinkle crushed peppermint on top and gift them to our friends and family. So yummy, so easy, and pretty cute too!

7. Vegan Cinnamon Sand Dollar Cookies

Cinnamon and almond vegan sand dollar cookies

The first time I saw a sand dollar cookies was in a holiday cookie magazine. I would not have guessed a sand dollar is a traditional symbol of the holidays, but apparently it is a thing. I actually baked them up in the summer because they are beachy and adorable, not to mention delicious. Kind of like a snicker doodle with a cute little pattern of almonds to make them look like a sand dollar. I do actually think they would make a cute and impressive gift for the holidays all wrapped up with some festive ribbon, but I also think they are obviously perfect for any beach themed party you may be throwing or just as a fun summer treat!

8. Soft Vegan Ginger Bread Cookies

Vegan Hamantaschen with apricot jam

Hamantaschen cookies are normally eaten at the Jewish holiday, Purim. You can fill a Hamentashen with just about anything, but I like to fill them with homemade apricot jam. These cookies are not very hard to make but take a little time. That said, they are so worth the little effort that goes into them! If you are not a fan of apricots, fill them with any jam you like, chocolate, or even try baking up a savory Hamantaschen!

10. Vegan Neapolitan Whoopie Pies

Vegan Neopolitan Whoopie Pies

I mean technically not a cookie, but close enough in my book to make the list. A whoopie pie is really just two fluffy cookies with the perfect vegan buttercream sandwiched between them. For this vegan whoopie pie we baked up a fluffy vanilla and chocolate cookie, and used a strawberry vegan butter cream in the center. I love Neapolitan everything y’all, and if you do too, then you have to try these!
